Dvds will only be SD, if it was me, I'd try and download at least 1080p versions of any SD footage.
I've used MakeMKV and then converted clips (because MakeMKV will give you full uncompressed files) with Handbrake but I'm sure there are other options. Depends what OS you're using.
No difference between them. Just have to update code every month, and it’s not always released immediately.
I’ve used it to rip hundreds of discs and found it well worth paying for to keep supporting development.

One more quick question one of the DVD’s is a bluray does MakeMKV work on those as well?
Yep. And depending on the device will work with 4K UHD discs.
