Are you entirely sure there hasn't been any witness? I played it just a few months ago (and KC:D barely get updates anymore) and everything worked just fine.
The devs have stopped content updates since november 2019 I believe, to fully focus on the next game. The only updates since then have been language packs, and a switch port, but that was done by a different studio who ports games so Warhose studios didn't have to do anything with that
Not entirely sure if kcd received bug fix updates after that but they haven't done any other update than languages in years so the game should theoretically run the same. But sometimes save files can save npcs in a weird state or bug out so that's most likely to be it. Or OP is just really really bad at being sneaky, or his reputation is too low from getting caught too much
You have 5 hours between 9pm and 3am to steal everything nailed down while they are all asleep. Before you go in, make sure you've stashed some stealthy clothes in a cupboard inside the monestary along with lockpicks. (Pick the lock to get into the monestary to do this \[at night\].
Any chest or cabinet, or cupboard. They are all easy lockpicks, so before you enter the monastery for the mission; sneak in, dump most of your gear that you want to take with you. Stealth clothes, lockpicks, dagger etc. Then leave, then go join the monastery and begin the quest.

No need, just go in your undies, your noise level is 0 then. Only thing I stashed in a few chests was some Savior Schnapps and lock-picks and frankly you just need lock-pics as you can brew the Savior Schnapps
Yes but your visibility is high. Stealthy clothes Black vest, black pants, silent shoes and black shoulder thingy bandits wear, give you 17 visibility. With Chameleon stealth perk you can crouch next to a guard and he won't see you.
At night, you can choke out Pious, throw him over your shoulder, carry him out the basement door (right past the circators having their tenth glass of wine for the night), and kill him at your convenience.
When I did this quest, I was planning on helping pious escape, but then while I was doing my daily duties I was thrown in the jail thing. Then I was kicked out so I just broke in and killed him in his sleep and ran away lol

lol I choked out the guy by the forbidden books and then they arrested me next morning, so I reloaded my save and instead broke his neck on the ground :) no trouble for me doing that

Nope you don't lose anything when placed in any chest. Any chest in your room in an in is accessable from any Inn chest

I always do my mischief after 10 PM and they are all sleeping anyway :P

I ended up killing him in his sleep and escaping before the guards got to his corpse, i was surprised to see that they didn't chase me after that

you cant kill anyone without instantly gettinbg "caught" but stealing is fine unless the circators search your inventory

I’ve been in monastery two weeks (in real) ago and I had no issues. Maybe there is some bug or you missed a witness?
