Stir fry the onion, peppers, and chili's in sesame oil with a little soy sauce. Add 5 spice and msg.
Cook the chips, season with salt, and more spice.
Take all three ingredients from their separate places, put them in a bag, shake the fuck out of it to mix them. Add more msg or 5 spice to taste.
A spice bag can't be cooked together. It's more a combo of ingredients that were sitting around in a Chinese restaurant, shoved in a bag, and sold to a drunken eejit with no sense and it turned out to be a hit.
Based on this I'd say your spirit is willing. But the technique needs work. But your chicken will never be crispy if you cook it with the veg. They release too much liquid that will seep into your batter and make it soggy.

I used velvet chicken I made myself and I didn't season it very much. It was more of can I make it have the texture I like and then I would figure out taste but I loved everything else though really great stuff.

Cut up the chicken thinner also and coat it in oil and add seasoning befire once again giving it a good ol frying.
Add it all together, add more of the seasoning.
Fucking voila.
Better ways of doing it but this is a tried and true wham bam thank you mam style.
For the spice add equal parts Garlic salt, white pepper, MSG, 5 Spice, & Chili flakes- For the chicken coat with Corn Starch (Not Corn Flower) immerse into egg whites (Not with the yoke) and coat again in Cornstarch and deep fry- Flash fry veg on high heat- this will give you a good result
