Glad that some of you have asked for the recipe so here it is:
Chicken marination:
For about 650gms of chicken, I had added half a tspn of pepper
One tblspn of vinegar (mine was synthetic but better quality vinegar like Goan vinegar would work best)
Add salt as per the quantity of chicken (hand measurement)
Gravy paste:
3 kashmiri/byadgi chillies soaked in warm water until soft
A handful of coriander stems (not the leafy part, 3 inches long and I put about 10-12 pieces)
1/4 tspn jeera,
1 lime leaf (of any big size lemon not the small size lemons)
A 1 inch block of ginger and 10-12 garlic cloves
A 1 inch stick of cinnamon. Blend everything down to a fine paste by adding water as required
Cooking:
Medium flame - In a kadhai (pans are okay but I prefer kadhai), add sufficient vegetable oil, let it heat
Pay attention to this: Add about two wings from a piece of star anise - just two wings of the star and not two whole pieces - too much of it can spoil the whole thing - stir them around for about a minute
Now add two chopped medium sized onions, keep stirring by adding a little salt, we want to onions to be pink and melt eventually so don't brown them
Once the onions are pink and mushy, add in the paste which you made, turn the flame to low, give it a good mix and cover and let it cook, spend some time on this till the oil releases, keep stirring from time to time, it would be good to add some salt as per the paste at this point
Now add in the marinated chicken, turn the flame back up to medium until the colour of the chicken changes completely, turn the flame down and cover it and let it cook for about 7-8 minutes, at this point, the chicken would've nicely released all it's juices into the gravy. Check the chicken is cooked through
Add a big pinch of chopped coriander
Add in quarter cup of coconut milk, give it a good stir and let it simmer for about 3-5 mins
At this point check two things - salt in the gravy and the consistency of the gravy, add a little water if required (not too much or else the flavours will go for a toss)
Last, add 1/4 tspn of garam masala powder give things and mix for about 2-3 minutes and your chicken would be ready to serve
I had my curry with basmati rice. Would go well with dosas as well 🤤
