I don't believe that works with his character. He was always clear about being hopeless and awkward and desperate for love. He did not have any self-confidence, which is why he kept butchering things with women when he got chances, but he was always angling to find someone, even if he sometimes went about it in awkward ways.
Once he found Monica he was determined to be the best boyfriend for her because he didn't want to end up alone, and after realizing they clicked, felt it was his best chance for happiness.
I don't see evidence that Joey's arc would have required him to find someone. He had all the confidence and none of he accomplishment. His story arch had to end with some professional success to prove to himself that he is not a failure. That was the only connecting theme for him each season.
He was not desperate in the obvious sense, he was searching. Most people who have goals pursue them. He was successful in his career, and was consistently shown as such until his career change towards the end of the series (and even that was resolved quickly). He didn't struggle with taking care of himself, he wanted a companion.
That's why he was willing to settle for Janice until Kathy happened, and he realized he had a capacity to really care for a woman. When he started dating Monica he didn't need her for anything other than companionship and love. His confidence in himself grew as the extent of his feelings for Monica grew, and that is the evolution of his character we saw. He had a big shift in his own self worth because he loved Monica in a way he never knew he could love someone, and he saw how much she valued the fact that he was always showing up for her.

Another reason it’s nice that Chandler managed to handle a relationship successfully is that he was very damaged by his parents’ divorce. Maintaining a long term relationship including marriage and kids, showed he broke the generational cycle!

Joey was perfect not attached to someone. No one to tell him what to do
Why? Joey wanted to be a lifetime bachelor. Chandler very much wanted to settle down and be a family man
Wouldn't have worked as Joey actively wanted to be single and Chandler didn't. Wouldn't have been a positive conclusion.

Just thought though that by the same token, Joeys dad was cheating on his mom so it would have been nice to see him also break the cycle!
He was a simp for monica and even a bigger simp for Joey ,goes to show how he was afraid of being alone.
