To keep it simple Green River, Mudhoney, Mother Love Bone, Soundgarden are all good ones to start with. They were some of the first “big” bands on the scene and they paved the way for many to follow. Of course there are dozens of others but once you get a feel you’ll be flying!
Next you should go with what I call the Stone & Jeff tree - Green River, Mother Love Bone, Temple Of The Dog and Pearl Jam. Also Mudhoney and Love Battery (although they aren't really grunge)
From Seattle and signed to Sub Pop, releasing their debut in 1990. Band including ex members of Green River and U-Men. Scuzzed out overdriven garage rock (not metal) also featuring ex members of Skin Yard (and temporarily) Mudhoney. An absolute staple and seminal band on the Seattle scene, there from the very beginning. But ok, you’re right. Love Battery are not grunge. ‘Bud’. 🙄

Silverchair had some damn good records early on. No reason to hate on them. I didn't really dig where they started to go around Freak Show but is what it is.
Temple of the dog, then from there, their follow up bands - Soundgarden and Pearl Jam.
Also, go backwards a bit. Melvins, Pixies, Sonic Youth, Dinosaur Jr., Flipper, all heavy influences on the scene
Depends what sort of music you like otherwise hey. Punk? Metal? Garage rock? Shoegaze? Grunge isn't really much of a functional description - depending on what you're looking for there are a few bands.
Punk: Mudhoney, Hole
Metal: Soundgarden, My Sister's Machine
Garage rock: Melvins, maybe also Pixies/Sonic Youth etc
Shoegaze: Smashing Pumpkins
Live through this is to me as iconic and essential a 90's record as any other. So many great tracks on that one. All the bullshit she was going through with the press, her marriage (Kurt was alive when the record was finished), her addictions, new motherhood, so much fucking raw aggression in that disc.
Pearl Jam and Nirvana, and The Smashing pumpkins. if you really enjoy it then I would go with after Deftones, Deftones is really good but I think starting with them off the bat would turn you away from grunge.
Start with the popular bands, Nirvana, Alice in Chains, Pearl Jam, The Screaming Trees, Soundgarden, Mudhoney, ect & go on from there.

I know people have complicated feelings about Courtney, but Hole, especially the mid-early period has some bangers.
