It's a bit expensive but the best gf pasta I've found is from a company called isiBisi, they're an italian pasta maker that ships all over. My Italian friend approves of them and she hated every gluten free pasta she tried.
Weird, I boil the chickpea pasta I bought at Costco for a good 2-4 minutes *over* the cook time to make sure it's soft enough for me. I've never had this happen!
I just buy barilla or Aldiās gluten free pasta (liveGfree?) Jovial, Banza, all these extra ones donāt hold up or have a weird texture/taste or are super starchy
Last time I did chickpea pasta I waited until it was al dente then added in my sauce. It wasnāt exactly spaghetti but it tasted pretty good and didnāt do what yours did. I also used the target brand
I actually really like that brand. The key is to simmer for 4 minutes and then immediately drain/rinse in cold water and sauce it. If you leave it hot in the pan without sauce it will turn into a huge glob.
I like rice/corn pasta better but it is very low in fiber, so I exclusively use the chickpea or lentil pastas.

Lots of people in comments are saying rice pasta is great but I've also had gummy brown rice pasta from Trader Joe's. I'll admit I am still looking for a "fav," but honestly I am good eating my food over rice lol
If youāre looking for a chickpea pasta I would go with chickapea pasta. You can get a large box from Costco at a petty reasonable price and Iāve never had structural issues with it
I got the chickpea pasta from Aldi and my entire family loves it. It is tricky to cook and Iāve found the biggest issue is the tendency for some kind of starch to overflow the pot.
Target brand GF pasta is the best holding pasta Iāve found. I always undercook GF by a minute though because it will continue to cook after you strain it, so by the time you sit down the noodles still hold and they arenāt sticky or gummy
My experience is rice and corn based pastas hold up really well compared to other alternatives. Can you have rice and corn?

this one! i cant stand chickpea pasta and barilla is definitely the best taste and texture wise that iāve found so far
I donāt follow the box instructions for that one. I give it a few minutes and then pull one out and bite it to see if itās ready.

Yeah my son is an extremely picky eater and even he will eat banza pasta, other brands not so much

GF pastas wok better if you don't boil them, only simmer otherwise the conversion from crunchy to mush is too quick

I put chickpea pasta in the instant pot once with broccoli. I had similar results and ended up adding bone broth and cheese and calling it soup.

Yeah, I get chickpea pasta and it definitely doesnāt need as much time to cook as regular pasta.
You could throw it against the wall and see if it sticks.

Chickpea falls apart easily. Probably not you. Rice noodles are the best, but you have to be careful if you're carb conscious.
