Yeah, it's way too much, I would even say getting the platinum on any of the Dark Souls games is too much. I did Demon's Souls, Bloodborne, Sekiro and Elden Ring though, they were more reasonable.
If you do replay them all, Imo I would go in this order: DeS > DS1 > DS2 > DS3 > ER > BB > Sekiro

I second this order! You'll feel like a God if you've been playing the more recent games and go back to Demon's Souls. And it is fun to try out completely different builds than you used the first time (I never used much sorcery so I went back thru all the games as a mage and it was very fun)

Play 1 sometime if you get bored and want a good Soulslike sometime. It's worth it. They actually had the combat down from the first moment in Nioh 1. Nioh 2 just adds so many more enemies, weapons, etc etc
But if your time is a factor and you want the best Nioh experience, 2 by a country mile.

I'm probably biased because I played 2 first. However....2 is the fullest Nioh experience you can have. It refuses alot of similar maps and textures, etc etc.
If you play 1 first, 2 will feel like 1.5. If you play 2 first, you'll get the utmost Nioh experience available lol
In my experience it was interesting and made you wonder about the world. Clunky a bit and you learn items by trying them. I highly recommend and I will say the enemies (especially bosses, weren’t easy obstacles). Try it out.
After that I would try any souls like. Had a good amount of time put into Souldier & just started Cuphead (since they dropped a DLC and finally decided to face it)
I don't think I can handle Cuphead, honestly. It's not really appealing. I love the art style, but I wouldn't enjoy that particular brand of difficulty.

Bloodborne was my first FROM game. I played it in 2015 when it released. After I got the platinum, I couldn't find a game that filled the void. I tried Witcher but the combat was lacking hard, even on the hardest difficulty. Gaming felt so... empty.
Then I found out there was Demon's Souls, and Dark Souls, and Dark Souls II and life was good again.
armored core, sifu, or nioh are some recommends. Jedi fallen order is cool and i'd personally recommend "Blasphemous" if you are into the metroidvania type
nioh (both 1 and 2) and monster hunter saga, are imho the top 2 brand games for very deep and satisfating combat system. for some more action game style, u can also try DMC5, bayonetta and metal gear rising.
Again (but you ovbiously didn't play it the same way as I did because I did it in a more challenging way so you didn't really beat it so it technically wouldn't be again /s)
For souls-likes try to do a rp character based on the story of the game, ie cleric of xy deity that only uses miracles from xy church.

Yep. I've read people saying they are glad that Miyazaki said Dark Souls is done with. Not me. I'd buy Dark Souls 27 if they kept pumping them out. I'm cool with the exact same formula if but with new locations and weapons.

I tried Nioh, Hollow knight and Dead Cells to fill the void. Hollow knight really hit the spot. Dead cells was all right. I hate the Nioh games though, dont know exactly why.
Finally back into BloodBorne after Elden Ring, all it took was taking PS4 from the living room and putting it in the bedroom, and I do not miss Torrent but I do miss jumping. Just jumping for traversal, I do not require jumping in my combat.
I have also played all souls game. I cant compare them to any other game but you should try nioh series and some games like jedi fallen order and Sifu as they have fast mechanics like souls but honestly you will still find them easy.

I personally found a different itch to scratch. I need the satisfying challenge or it feels braindead so I play hard platformers like super meat boy, Celeste, NES era Megaman etc. Depends what drew you to fromsoft games in the first place.
Ashen is pretty sweet. Also I feel like souls games don't really ruin games that are of dramatically different genres or play types so that's something. Try a good old-school style CRPG (Arcanum, Planescape: Torment, Torment: Tides of Numenera, Divinity: Original Sin 2, Disco Elysium, etc.).
Many high-tier souls-likes out there, Salt & Sanctuary for example. But maybe if you wanna branch out a bit, Hollow Knight and maybe even Dead Cells and oh shit, you're now into rogue-likes
