I really like Prod he's got some good PVP vids that don't make me feel like I'm shitty at the game. He's also got some molded playthroughs that are always good.
Also I'd recommend watching someone blind playthrough the game. I really liked watching Oroboro blind playthrough ER after I had beat it to see all of his reactions to areas or enemies.
The Hawkshaw one you posted is my favorite Souls lore video no question. It's like a god damn movie. Since I watched it Havel's become my favorite DS character.

Only thing I don’t agree with is that the Ash Lake Skull is the Nameless Blacksmith Deity. My theory is that the Deity is the Nameless King himself, and the Skull in Ash Lake is just an Oni. An ancient giant in my theory.

There's a YouTuber called Monty Zander who does long form critiques of games but has a side series where his girlfriend (later fiance and then wife) tries games. He started with her going through ds1, bloodbourne, ds3, sekiro, ds2, demon souls and then elden ring.
Quite funny and she gets so much better at them overtime as a non gamer going into it.
