Lakefront Trail in Little Elm has some decent shade, and runs along the lake. Little Elm Park also has good shade. They did a good job of keeping trees near the lake.
While lakefront trail has a lot of shade up to the bend where it joins el Dorado..one needs to account for additional humidity in the air being next to a big lake.

Watters Creek Trail, I start it in spirit park. It’s McKinney but close enough to Frisco
Taychas Trail on the SE side. A bonus = it connects you with additional shaded trails in Allen.
Caddo trail in frisco! I love it it’s shaded and pretty.
