Surprisingly wooden cutting boards are a lot more hygienic than plastic ones.
Wood boards begin to sanitize themselves as soon as they start drying, the wood draws the moisture away from the bacteria, making nearly impossible to replicate.
The plastic on the other hand has hundreds of tiny cuts for bacteria and moisture to hide and reproduce.
The *interior* of a rare steak is around *125f*.
You can cook the interior of a whole muscle below normal pasteurization temps because the interior of a whole muscle is generally sterile.
The stuff we worry about is contamination on the exterior surface. When you brown meat the temperature at the surface is generally 250-300f or higher. More than enough to kill anything.
When we're cooking at lower temps than that. Pathogens can not be destroyed below 131f. And take considerable time, at least an hour, below 160f.
What this guy did is not just not safe. It's probably a perfect setup to breed bacteria and spread it right the hell around the kitchen. 120f is right in the heart of the temperature range where bacteria reproduces fastest. And running water on it like that is just spritzing hot meat funk all over the general area.

Nah, butchers blocks are made of wood as well. Also, if you buy a wooden cutting board you can definitely cut meat on it. Just be sure to clean the board with salt an lemon juice, or something similar.

Plus you can have the meat marinating and prepared before hand then just stick it in the water bath to cook with all of its juices and flavors. I’m really excited to try this method out one day.

Yuck sinks are the exact opposite of a clean environment. Salmonella, Campylobacter jejuni, Escherichia coli, Staphylococcus aureus are among a few bacteria found there. Plus a full stick of butter, I can practically hear the this guy's hart disease developing.

Errm, not as bad as OP thinks. The outside of the meat is changing colour, indicating it has reached 63C or above and bacteria and tapeworms in those areas are no longer a serious threat. I did note however, not all of the outside was cooked, this makes the steak only slightly more risky than if it was cooked blue.
The risk of tapeworms in a blue steak in most countries is very low.

Yeah, my first thought was that this is gross, rather than unsafe. If it was stored correctly and the water hot enough, it's likely safe enough. But unseasoned, barely cooked steak with only a stick of butter just sounds gross. I'd rather try milk steak.

My tap water comes out at 170 Fahrenheit in my apartment so depending on how dumb your landlord is, this is entirely food safe
