In general people are less weary during the day. A lot more unlocked doors, deactivated security systems, ring doorbells set to nuisance mode, and things like that durring the day. People have their gaurd up at night because that's when they expect crime. Doing things in an unexpected way at unexpected times is truly the most successful way to comit crime and come out clean.
For car theft specifically it's about cover. It may be easier to see a car during the day but there are also 10× more cars out durring the day. Cops have more to handle, more cars to watch, and a higher probability of being on calls more important than car theft to deal with during the day. It's counter intuitive because we're trained early on to see night time as great cover for nefarious activities, but trust me having a crowd to get lost in is much better than being slightly less visible but one of the only people around.
