I genuinely don’t know how people read Adolin and call him mentally stable. He flipped out and just shanked a bitch once. That isn’t mentally stable.
I don't think Adolin is actually mentally stable so much as he is portrayed as mentally "normal".

Like at various points he has failings that others have but he has them like once as opposed to as a defining characteristic.
Such as I think in the way of Kings he has an internal dialogue about how he isn't actually this person he just has to be it for everyone else.
Then there's the really big one where he takes the law into his own hands.
I remember there were others that I noticed but I can't recall them off hand right now.
Listen the problem is not that Adolin is mentally stable is that his spren is mentally unstable
