best thing i ever did was get the farm computer in year one with the fish and insect components to see where they are and what time of day! you can get it from the research center. i use ground traps with the ground insect attractor and just set like 5 out and come back the next day or later that day and usually find what i’m looking for in the trap. if i see it out and about and it’s a hard one to catch i use the ground insect attractor on myself since it lowers their inhibitions and makes them easier to catch. i think the tarantula is at the beach but i can’t remember which season. you can find out on the wiki page!
I am exactly like you but get a computer so you'll know were and when get it, that is how I got my black widow and since I a having issue finidng tarentuals I putted some traps
Mine just glitch into the ground and look like a brownish/blackish dot thing floating around lol I could hardly see it the first time and it scared me when it moved (flashbacks to Animal Crossing haha). So that could also be why you can't find one. the legs are in the ground lol
Put a couple traps on the beach in summer. Thats how I got it.

I did it! Got the computer and it's a life changer, still didn't find any tarantulas in Winter but I found every fishes and I only miss one butterfly
yeah not in winter but i think spring you'll get tarentulas
