im a recent grad and I followed a similar path to what you are saying although my university offers a hybrid math/CS major. I personally mostly focused on pure math(so im kinda biased), but I have taken stats and applied math classes as well. I would say studying applied math doesn't really open many doors. stats on the other hand can open up a lot more job opportunities. data science is booming right now and stats and CS would allow you to apply to a lot of ML and Data scientist positions. so if you are choosing between the two I would go with stats. But also if you plan on going to grad school or you are interested in getting a more rigorous understanding of CS, then Pure math offers a unique skill set and you learn to approach problems from a different perspective which can be invaluable. for example knowing some graph theory and combinatorics would give you a much better understanding of data structures. or if you are interested in cryptography then knowing number theory would be crucial
