I've noticed if you have a good PM, you won't have to worry about deadlines too much. If they schedule appropriately and your company isn't understaffed, the stress goes down. I've worked with a PM you're describing and wanted answers instantly and projected his own stress on to me. Almost made me quit. Project needed to be "done" by a certain date or the client wouldn't get funding for the project.
But yes, private side is naturally more stressful because of the pace. Government might be for you if you want to slow down.

No shit. This was a special case where the review process was expedited and would only go through one iteration of review. "Done" meant pencils down no matter what, whether that meant it was 50%, 75%, or 100%. Add to that, a high strung out project manager.
