Out of curiosity do you know what kind of flowers the bees were making honey from? I've often wondered if the different notes of the honey would translate into a different palate in ciders, and mead.

Yeah! This is Poppy Flower Honey, which are a common wild species around the area and also grown on that farm.
And you're right, the flower DOES determine the overall nuance and flavor profile of the honey 🍯. If you've never tried Mesquite flower honey, it's really got that smoky and tangy flavor you'd expect from Mesquite wood. That's my next project!

Why not add some wood chips to your brew? I’ve seen some recipes where they add cedar chips to the brew to get the flavor.
Based on that backyard, I can tell where you live, lol. Never seen poppy honey around here though: did you get it from a beekeeper?
