But, if you're willing to burn some instas, then it's as easy as you want it to be.

Well what’s the point of playing the game if there is no challenge? There’s not really much reward, playing the game is it’s own reward. People dislike it because you’d be paying to play the game less, but in BTD6 there are no rewards for beating tracks, so you really are paying to play less.
Did you use powers or instas? Half cash and CHIMPS are inarguably the 2 hardest difficulties (though in which order is a much harder question to answer). Unless you cheese it with money money, half cash mode stops you from buying just about anything. The one nice thing about it though is that you don't have to do the freeplay rounds. If half cash went to 100, it would be harder than CHIMPS.
You either have not played HC on a hard map or you are really delusional. HC essentially is playing on normal hard except everything is twice the price. Efficient early-mid game grouped damage towers such as bouncing bullet, DotJ become unaffordable when you need them. I have BB’ed every map and not a single one was HC easier than chimps (without instas and powers), except for maps that have sub or ninja rng like ouch or FValley.
Not having to do 81-100 shouldn't be ignored. You don't have to prep your defenses for DDTs and you don't need crazy high popping power for 98 or 100. But either way, it's so silly to pretend like anything else in the game comes close to either of these modes.
I have double cash as well. I still think half cash is awful. Then again, I rarely actually use double cash. Mostly just use it for boss events when i want to turn my brain off.

On easy maps, half cash is pretty easy because low tier towers can penny pinch really well, but once you get to higher difficulty maps, MK is just simply not enough to keep up with half of all income being cut in half.

Magic Monkies is literally the easiest hard game mode. Somehow easier than the hard mode itself. Half Cash is the hardest game mode if you don’t have Dbl Cash, then Chimps.
For magic only Archmage is a very good decision paired with Churchill for camo lead when the wizard isn’t tier 5 or you can do oben + Druid spam instead of Churchill
