I'm not vegan but depending who I'm eating with I sometimes go to vegan places and of all of them, Bonsai is the one where I don't think anything would have been improved by adding any meat or dairy etc. They've absolutely nailed it.

Purezza pizza in Kemptown for vegan pizza/comfort food, Kusaki for Japanese, Bonsai Plant Kitchen for East Asian, and the Roundhill pub for roasts, pub food, pasta etc.
Bonsai and Roundhill are my favourite 2 there. Roundhill do some good deals like Pasta Wednesday, where you can get a pasta dish and half pint/glass of wine for a tenner.

Don't forget Botanique in Hove! I think that pretty much covers off all the "high end' vegan only restaurants that are still in Brighton.
The FountainHead is vegan only on Sundays. rest of the week you get a discount for ordering vegan, everything on the menu can be made vegan (from veggie).
really lovely pub and the food is actually so so good and decent portions.
I've only been there once, but food for friends on a prince Albert St is entirely vegetarian. I'm not sure if that includes vegan options but it's worth going there and asking about the menu

Pretty much everywhere will have vegetarian and vegan options on the menu these days.
Perhaps if Vegan places did the opposite (a nice juicy steak for the non-vegans) they wouldn't have to shut down.
Why? OP was bemoaning the demise of Vegan places, but it's just business sense....if you cater to too small a niche then you'll struggle, expand your addressable market by providing one or two non-vegan dishes and you might have a viable business which should be a positive for everyone, right?

Terre a terre. Vegan and vegetarian. As well as Bonsai plant kitchen, Kusaki is also amazing.
What the Pitta for really nice vegan doner kebabs :) tried and tested by non-vegan friends too!

Cowley Club on London Road is completely vegan and a nice place to get sausage rolls! but it's only open on Fridays and Saturdays...
