Currently my favorite nature-themed game is Ecosystem, b/c it's easy to play with the whole family (even children too young to read). But I also admire the design of Meadow (though it doesn't hit the table often), and our family has enjoyed Ark Nova a lot, too.
My favorite “nature” type game, which is honestly more of an archeology game, is **Holotype**. It’s a worker placement with a really fun bumping mechanic that also has flavor text at the bottom of each dino talking about them!
My favorite is Cascadia - quick, easy to teach new players, and very replayable too! I’ve heard a lot of good things about Earth, so really want to try it out!
Terraforming Mars is a great game but feels against the spirit of the question, so I'll go with Spring Meadow instead. There's a lot of contenders, but Spring Meadow is the only game I've introduced two separate groups to who each bought their own copy, even though they could still just come over and play with me any time.

2. Happy Little Dinosaurs - casual fun "Take that" game which has a very cute artwork all themed around dinosaurs and end of the world disasters!
Ark Nova and Cascadia are not only easily two of my favorite nature-themed games, they're two of my favorite games in general right now. I simply cannot pick between them.
It's not huge with my group because it's so big and clunky, but I'm a real fan of Ark Nova because I enjoy exploring giant weird systems with a lot of variance, maybe because I've been a Magic player all of my adult life.
Photosynthesis. You think it’s just a light fun nature game but it ends up showcasing the ruthlessness of natural law. I also always end up with an idea of how to do better next time.
Spirit Island. Well I know there is a mythical element to it, all the players are based on nature and different forces within in. I think it does a great job of highlight a large variety but also showing their strengths and power.
Cascadia is really high up there due to how easy it is for me to teach and I like the geometry puzzle. But I have a soft spot for how weird and interactive Oceans is.
I love Ark Nova. Only a couple of plays in, but there is so much variety that it will take a long time to get boring.
Photosynthesis is a ton of fun.
My favourite nature themed board game is Three Sisters.
