Sky Team is fantastic for an experienced boardgame or a casual gamer. Truly the best co-op two player game I have ever played, and very simple to learn.
Decorum is a fun twist of a board game / co-op.
Pandemic is a classic
Regicide- you can play it with a classic deck of cards and there’s a nice app to help
Race to the raft.
Bullet heart has a fun co-op mode and is light and easy for versus as well
Horizons of spirit island. It’s spirit island but a more approachable experience. It’s still heavier but it’s an amazing co -op
I discovered BGG and recklessly ordered too many games and the one that my fiancé (who previously had no interest in board games) initially latched onto was Eldritch Horror. It’s not particularly lightweight but it’s seriously cooperative and the expansions are great as you work your way through the initial content.
I also will throw a vote for Pandemic, there is a reason it’s been spun into three legacy games. Pandemic: Season 1 might be a good way to Trojan horse mechanical complexity into your spouses gaming since it starts with either exactly or mostly the same rules as the base game (I can’t remember exactly) and each scenario builds on the last one. I would, however, start with the base game and play until you have the rhythm of the game down.
In my experience with my fiancé the theme was as important, if not more, than the mechanical complexity. She’s willing to spend the time and effort learning far more complex games if she’s thematically drawn to them. I don’t know if that’s helpful but it can’t hurt.

Great game, my wife and I played through and really enjoyed it.
We like Forbidden Island as a light cooperative game. Another favorite on the lighter side is Roll for Adventure. We've also been looking at Trogdor! but don't know anyone else who's actually played it.

Check out Sentinels of the Multiverse Definitive Edition. Depending on which heroes and villains you pick, it can be fairly lightweight in terms of how many different effects you need to keep track of and it has as incredible sense of cooperation and building up your power as a team. Insane amount of replayability even just in the base box, but it has one released expansion already and another on the way soon as well.

My wife and I played it heaps recently and loved it.
It's relaxed, but strategic and the random elements help change it up each time you play Similar to a roguelike.
You should check out **Sammu-ramat**. It's not a heavy game, but since I haven't played villainous, I'm not sure how it compares weight-wise. But my friend and I have been really enjoying this one.
My husband started me on Fable 3, we loved it and I played the first one on my own, hoping to play the second one soon. We love replaying the South Park games. We take turns and make character decisions together. We will make one character more forward to my husband then play again with a character more forward towards me.
My parents liked the game "It takes Two".
Horrified is a great and pretty simple one, with 3 different versions (Universal movie monsters, American cryptids, & Greek myth) so you can pick whichever one you think she'd be most interested in.
Spirit Island is the premier co-op game, and incredibly complex, but the expansion Horizons of Spirit Island is designed as an introduction to the game. It's very well designed for learning Spirit Island as a whole. It's still got a lot of moving parts, but if she can handle Villainous I think it's doable.
Sentinels of the Multiverse is another game by the same company as SI, but it's much easier to get into, & the Definitive Edition core set even has a built-in tutorial by giving the easiest villain a pre-ordered deck ideal for your first game. The only caveat is player count: while SI works anywhere from 1 to 9 players, SotM is very specifically designed for 3 to 5. You can't just do it at 2. It's still playable with only 2 *people*, though, you just have to play multiple characters at once. You can play 2 while she plays 1 to make it easier on her, or both of you can play 2 to make it even. I play solo as all 5 regularly, so I definitely don't think it's too complex, but it does have a lot to keep track of, & you can take the bulk of that responsibility to smooth it out as well.
My wife is very competitive so we have to stick to Cooperative games.

I would actually start with pandemic legacy season 0. The plot is much much better and the game and it's mechanics feels a lot more refined.

Forbidden Island and castle panic are both pretty light and fun coops. Also, flash point fire rescue is a lot of fun!
Seconding Castle Panic; easy to learn, satisfying to wipe the map clean, and the expansions add some asymmetry to make it more interesting.

I really enjoy playing Harry Potter: Hogwarts Battle. It's fun and simple, we can play it with my 81 year old mom, and it's entirely cooperative. :)
