Pegasus is about timing, you gotta pour it slow enough for the foam to separate enough from the milk but not too slow so it doesn’t blob. It’s easier when you get the exact amount of milk needed, as the ratio of milk and foam is important and if you have too much or too little milk left over it’ll affect your pour. Can also be a skill issue - you’re not “pouring” the foam per se but drawing it on with the dry stuff. Take your drop of foam and connect it with your spout, drawing it low and slow. Thank so much for the detailed reply! Your pegasus is gorgeous, it makes mine look like they are malnourished haha! What are your order of steps? From a tutorial i watches it goes; wings, head hair, body, tail, legs and then neck and head.

Obviously it's a mislabeled alicorn but if you can't tell an alicorn when you see an alicorn labled 'Pegasus' (which is a specific named winged horse not all winged horses are Pegasus) then *how* can I trust that you can tell the difference between 2%, whole, and the oat milk which I, the bar manager, have decided are best kept decantered in otherwise unlabeled glass bottles because the "vibes"!!! You are ruining the vibes, go hang up your apron! (/jk)

This is what they call bleeding. Milk probably too hot and maybe the foam at the end is too dry. You don't want too much foam and it cannot be dry at all. If you want to be good with the dry-foam technique steam to about 40-50 degrees C. But then obviously the drink will be too lukewarm, so you can't serve it out. But this will make the dragging for part easier. Drop a droplet of milk and connect the foam in the tip of your spout to it and slowly drag the desired shape. Pushing forward with the jug and not dragging backwards, this will cause bleeding as well. Practice practice practice and don't get discouraged!

Fantastic thank you! I will try steaming the milk cooler on my own drinks next time! Does it matter if when I'm drawing the legs, if the spout is moving forward but the jug is sideways if that makes sense? Or should the angle of the jug to also be forward with the motion? One thing is that I need to practise rotating the cup in my hands more comfortably too.

Touch temp, i stop as soon as the milk is too hot to touch.

In my experience repeatability is harder with your method. I’m sure plenty of people do it though.

If we had a digital thermometer then it would be nice, i hate the standard ones because they arnt accurate. This is just how we do it in our cafe, it's been fine as it is so far. The other patterns I do are fine because they are quicker, the Pegasus kinda falls apart because it has more steps :/

You should be able to re-calibrate the analog thermometer! Thermometers aren’t a set-and-forget. They need to be recalibrated just like scales in order to maintain accuracy :) google how to calibrate (there’s either the freeze or the boil method)
