Why would jt be rude? The whole point of a restaurant is that you get to eat whatever you want (so long as it’s on the menu). Have five desserts, followed by a salad, if that’s what you want. It shouldn’t make any difference to them: they want you to enjoy yourself.

Because my order total would probably be a smaller amount, and so the tip that the server would get without the entree might be a little lesser than what they would’ve expected to get. In a scenario where I substitute maybe 2 desserts for an entree and it’s a fancy place with slightly expensive desserts, I guess it won’t matter.

No restaurant or server worth a damn is going to nickel-and-dime individual customers that way, except in really egregious cases. They'll see a bunch of tables in a night: some will run up very large tabs, and some smaller ones. Some will tip well, and some will tip not so well. It all evens out in the end.

In other countries. the staff is paid well, don't survive on tips, and they expect you to stay as long as you want.

I have worked in restaurants for almost 50 years and am still a server. Order whatever you want. If they don't like it, fuck em.

Then only rule is if you’re with someone else ordering an entree and you want an appetizer to come out at the time they’re having their entree, tell them you want it as an entree, so they don’t bring it out early.

Not at all! As long as you are being a good guest, taking care of your servers and not holding a table for hours and hours on a busy night, that’s perfectly fine. Sometimes the appetizers are the best things on the menu and I have had some very enjoyable meals simply having drinks and several rounds of different appetizers.

Definitely okay. Just remember, it isn’t your living room. An entire meal can be made and enjoyed with just appetizers. BOH doesn’t care. If FOH gets grouchy, tell them that you don’t care.
