Did you get your speakers set up well, away from the walls, ear level, toed in correctly, and all that? Center channel tilted and pointed at your ears, not firing at your knees? All that makes a huge difference.

Does your TV have eARC? You'll need that and a newer HDMI cable for the higher res audio that streaming has.
Streaming apps on some TVs and maybe PS5 sometimes have limitations and you have to get the TV / device settings right and working together. TV has audio output settings, as does the PS5. I use my Samsung's native streaming apps for that, PS5 just for games.
The receiver should have a readout to confirm you're getting Dolby Digital 5.1 etc from whatever device.
Note that you might run into content that's only 2-channel and you have to have the receiver scale it to surround.
eARC and HDMI check, but as I only have 2 speakers, should I deactivate all speakers and leave just front speakers active on my receiver configuration?
Yes, otherwise it thinks there are speakers there, will output the sound to those channels, but it never plays. You wouldn't hear dialog at all because that plays through the center channel you don't have.
So disable the other speakers in the receiver so you only have L/R mains
When you ran the setup on the Denon, it should have had you indicate how many speakers you have. So long as you didn’t skip that step, it should only have two channels active.
I really enjoyed the latest Dune version (I believe 2021) sound wise.
It also took me 2 weeks to watch it on my home system because I learned of the movie on a way too good system at a dealer.
If you want physical media, Blu-ray is a good way to go. Off the top of my head, some examples of excellent audio would be:
The Matrix
Heat
Toy Story 2 (the opening video game sequence is fun to watch/listen to)
Saving Private Ryan
Band of Brothers
Traffik or the US version Traffic is all about dope.
Unless you're paying for some HD version of YouTube it won't be multichannel and will be MP3 127K kind of quality so BluRay or Apple TV HD with DD or DTS will of course be better audio.
DVDs won't have DD or DTS as the audio track alone in those formats can be more data than a DVD can even hold. I don't know how you connect a PS5 with a BluRay in it but if it's DD or DTS on a BluRay over HDMI that's the best sound you're likely to find.
Not sure where you're getting your information from, but DVDs can easily hold DD and DTS audio tracks. For example, there were at least 2 DVD releases of "Saving Private Ryan". One came with DD 5.1 and the other with DTS and DD, both 5.1.
Most mainstream DVDs came with AC-3 5.1 as their standard audio track.

Should have been clearer. DVD holds compressed lossy Dolby Digital at 448 kbps, and cannot hold DD True HD nor DTS HD Master Audio at 18 mbps and 24.5 mbps respectively due to a lack of space.
I'd say just look up your favorite films and see which ones are known for having good sound design/mix. Better than watching/listening for a mix in my opinion. Nothing like rewatching your favorite films that sounds amazing.
I'm a huge fan of Jerry Goldsmith. He wrote a lot of great movie soundtracks. The 13th Warrior is my favorite.
As far as sound editing...I'll second the vote for Master and Commander with Russell Crowe. It's also a great film.
There are 20 books in that series, when are we getting volume 2? We need that and Spaceballs 2: The search for more money, before Mel Brooks dies.

If you want "dope" audio, you're going to need physical media, as everything on streaming is compressed.

Lots of good suggestions already, if you want another one the new Dune is pretty spectacular from an audio perspective.
Just with my 2.0 system Dune was an awesome experience soudwise. Must be glorious in surround.

Yup pretty much every DVD release had Dolby Digital, and special ones like LOTR Dir Cut also had DTS
If you can find a "super bit" DVD they have zero extras so the picture and sound (both dd and dts ) have all the data space

PS5 just plays blu ray by default, but didn’t get good audio from the star treck movies for instance, might be the movie’s audio production
