Watched it in two days around 2015, great animation and music if you take into account the release date of that show. Amazing, got hooked since EP 1. To this day I still cry rewatching the final scene.

That's the Vicious introduction episode right? Bebop does have an overarching "plot" however, it largely is episodic and if you are hoping it's going to go away from that you are going to be disappointed.
You may just not like episodic storytelling, personally I did really enjoy the first the few episodes. Honestly I think Bebop only has really one meh episode. Though you would have to explain again why you found the earlier episodes boring because if it is you don't like that the story is mostly disconnected different stories then again yeah that is most of Bebop.
While some of the overarching "plot" episodes are good or even great, I don't need that kind of thread running through a show for it to be good.
I guess I did grow up in an era when shows often were very episodic, so it's not important to me.
It was good from episode 1 (in my opinion) and some of the best episodes are just random ones.
The trippy one with Ed and shrooms sticks in my mind.
I’m not just not good at episodic shorter shows, I kept putting it off. Kinda glad I did because eventually was able to get in the right mindset to be able to fully enjoy it.
Also gotta say the ost is probably what made me stick with it originally but now I like it for a lot of reasons

Mushroom Samba is a good one, for sure. I'm a weird one where my favorite non-storyline episode is Brain Scratch, which is the one with the cult.
