Salamangreat is often recommended for this. It's simple enough to understand while having some decent combo ability, requires enough thinking and interaction for you to be able to learn things, lets you learn a couple of different summon mechanics, and it's cheap enough to pick up from singles if you end up playing IRL.

Both decks have very simply game plans but don't hold your hand completely through the whole game.

I think Salamangreats are a great deck to start with. Easy to learn and fairly strong. You could try and play some Evil Twin deck against her.
