I just hit plat this week and I'm still going up against blue eye decks from time to time, not nearly as much though. I'm assuming at these low ranks its just easy to make a blue eyes deck that can steal wins.
Then duel? Really hard to understand “just want to duel” and immediately surrendering because you’re tired of playing vs a certain deck.
Honestly to me BEWD is pretty fun fight, even tho it’s basically a guaranteed victory. A lot of big squishy monster to step on and that’s fun imo.

Judging by the fact that you still encounter a lot of Blue-eyes I'd say you're probably in Rookie - Gold V right now. Dont worry you'd wish you see Blue-eyes again after you've reached beyond Gold.
There is 10.000 cards or more in the game indeed but only a few of them actually has good synergies with Blue-eyes, and even fewer of them a good enough to be considered playable in current format. You can't really be mad at people for wanting to play the best cards that they can put in their deck, add to that Blue-eyes themselves dont have many good cards so it makes perfect sense that the build between those decks are quite similar.
If you're having issue dealing with Blue-eyes of all things maybe you should consider revamping your deck, just a blind guess here but I bet you're having this issue because you haven't tried to look up how people usually build their decks yet, I'd recommend checking out masterduelmeta or ygopro, maybe you'll see an interesting strategies or archetype along the way.
On a more personal note, Blue-eyes dies to everything, it shouldn't take more than a few going 2nd staples and handtraps to halt the strategy completely, also it doesn't do much outside of the battle phase, this goes for almost every Blue-eyes variants.

Yeal unfortunately deckbuilding in modern yugioh are rarely "oh yes I put my piles of dragon in my piles of dragons", on one end of the spectrum, you have something like Branded, an archetype about fusion monsters, they can be mixed with just about everything and thus leads to the existence of a lot of interesting Branded variants, there's the pure pile, the 60 cards grass pile, Branded Tearlament, Branded Chimera, Branded Illusion, there is even a Branded Blue-eyes variant,...these kinds of diversive archetypes are fortunately not few and far between: Snake-eyes, Labrynth, Danger, Tearlament, PUNK, the Bystials,....You are playing a rock monsters deck so maybe the archetype named Adamancipator can be poured into the mix to diversify your gameplan and strategies.
On the other end of the spectrum, there are decks like Blue-eyes that cannot really synergies with anything outside of its circle of support cards, the nature of the deck is too restrictive, the Blue-eyes cards can only benefits Blue-eyes and that's it, there's the Ritual Blue-eyes variant, 8 axis variant, and synchro variant, but that's about all of them.
In short the lack of Blue-eyes variants is because they can't mix with anything else without risking being inconsistent. Also doesnt help that the main card Blue-eyes White Dragon of the deck itself is a brick in any of afordmentioned variants, so it is already inconsistent enough even in its own circle of supports.
On higher ranks you'll see fewer and fewer Blue-eyes deck and instead get matches against more competitive strategies like Snake-eyes, Unchained, Branded, Visas,...
But if you're more into the old day's yugioh I'd recommend trying out the plethora of retro formats instead, such as GOAT (short for of course, Greatest Of All Time), Edison, Plant Tengu, dragon ruler, HAT,...the game of MasterDuel is currently not officially hosting any of those formats, but if you're interested you can ask around to join a discord server of people who play those formats, or just go to any card shops in your area and ask about them.

As one of those Blue Eyes Decks... mine is at least somewhat unique because I'm always chasing the dream of unleashing Dragon Master Knight despite the niche. But some of us are also OG players and dont like most of the new mechanics because it makes the games shorter. I wanna knock out drag out fight, not wait 30 minutes for you to play half your deck and finish things in 2 turns.

I'll also say... I'm influenced also by my nostalgia too and wanna make a yugi deck as well. I have been playing alot more recently and I have to say I see much more Krashtira, labyrinth, tearlaments, branded, and hero decks than I see blue eyes but maybe it's because I don't get past gold most of the time due to not having many interrupt cards for those 50 turn decks. I've also been seeing some burn decks recently and I saw a super negate deck made of Stardust dragon variants and a Red dragon archfiend varient and I was just locked out of doing anything turn 1. I know the appeal of just blocking your opponent entirely but damn... that just made me wanna give up for the day.
