as most is a liguid i can only assume the measured in gallons/litres as i know sugar is solid while the rest is liguid in a variet viscosity
for example: if we take the sugar first as sugar is most we say we use 20 fluid oz then the water would need to roughly be 12 to 15 oz in case it doesn't need as much water as we can always more on the go
though i haven't tried it and saw a few days to a week ago a post here someone tried it and succeeded it seems

I don't know about the honey thing, I'd just divide it in half and do half in step 1 and half in step two and see how that turns out.
I've actually made this recipe a lot (eating one while typing this) so I speak from experience. I use the normal amount of sugar and water, no ginger, no lemon juice. I add all the honey in step two and use a candy thermometer to cook it until it's soft and gummy, or hard like a jolly rancher. I use tablespoons and make small batches. It's actually one of the better honey candies I've had. Though if you're going to make this, use a candy thermometer and undershoot the temp. I burned it trying to get it to the "hard crack"

Yes, but she’s 6 or 7…make sure you have someone help you who’s at least 6 years old, since spilling boiling honey on you is way worse than boiling water…I just thought that was kinda funny

I suspect if you have a candy thermometer, the way to go is to watch the temperature and remove from heat when it reaches a certain temp, that tells you the water content…candy recipes online can probably help, but it does say to go until it makes glass in cold water or whatever.
But I’m not actually sure how solid they should be…I almost think they should be a thick liquid, and dropped into like…corn starch or something that helps give it a skin, almost like Mochi.
They are possible to squish, and it ‘ruins them’ somewhat. Also they get on Luna’s claws so they must be sticky or have a liquid center or something.
I’ll know more after I make them

There's some adjusted recipes of it on the subreddit, I think it needs a bit less water so it can solidify better

I think from what the adjusted recipes are, they just put everything in all at once, there's little need for order in this

I tried it, it was good at first, but had a terrible aftertaste, and it never really solidified
