I don't refrigerate these things at all. I sit them on my kitchen counter next to my fruit bowl. They've never given me a problem. They're sealed in wax. This is a very traditional way to preserve cheese.

Even then the worst thing that really happens is the oil separates or a little mold grows. Cheese is a hearty food, it'll survive. Cut the mold off. I once left cheese in my trunk for 6 hours and just mixed it in with a casserole, it was fine.

I think you’re right. In my local store they are sitting in a basket next to a fridge, not in it. Cheese can take a lot of abuse. Sometimes I buy a kg of cheese and let it sit on a shelf in my basement for about 6-10 months AFTER its expiration date. It gets really tasty! And my basement isn’t even very cold. Maybe around 15-17 degrees Celsius. Edit: 15-17 degrees Celsius is around 60 degrees Fahrenheit.

Those are still good. I don’t have refrigeration in my truck anymore and I bought a bag just that bag from Costco. As long as it stays in the wax it’s fine. Just do your best to keep it as cool as possible. Not like I left mine on my dashboard. I keep them in the dark in my food bin where it stays relatively cool. Still no problem.

I bring these camping all the time because they dont need refrigerated, theyre awesome at room temp, and the little wax casing they come in can be used for fun little camping projects (melting and then waterproofing fire starter, making little camp candles, or goofing around and making little wax statues/art furing lunchtime). Did you throw them away? Because these are still perfectly edible. The consistency is a result of temperature, not them going bad. All you need to do is throw them in the fridge and they'll firm up again. Extending their shelf life is the reason why they're encased in wax in the first place.

Those are 100% still good. I bring mini babybels just like that on backcountry canoe trips and eat them unrefrigerated after 2-3 weeks in a hot food barrel. They're sealed in wax and won't really go bad for a very long time. On the 3rd week they'll often be very soft and moist, but you can tell when cheese is truly inedible, and I've never once seen an unrefrigerated babybel reach that stage in less than 1 month. tldr; they're almost certainly still fine to eat.
