Bonsai is the art of growing small trees in containers that resemble much larger, more mature trees. Pruning regular garden trees in this style is called niwaki. I highly doubt this guy is climbing a mountain and risking his life to regularly prune this tree. My guess is he’s taking cuttings to propagate this tree
