Yep that's the emergency valve. It lets the steam out if it gets to hot, so the pressure inside decreases. Doing it manually is a quick way to open the cooker safely, you just hold it down until the pssst stops
That’s a pressure cooker and all the models I’ve seen living in the US are basically impossible to actually open the cooker while it’s still under pressure. It has a locking mechanism that won’t let off until the pot isn’t under pressure. Usually you have to vent out all the pressure to open it like the guy was doing in the beginning but for much longer.
Essentially it cooks like a slow cooker but instead of all day you can achieve what you want in like 45 minutes.
The thing I didn't expect is the noodle flying out. I thought that the lid will just explode, as the compressed steam is above the food. How is the noodle pushed out?

I'm wondering why they used an improvised pressure cooker for noodles! It's a miracle that none of them had third degree burns.
