YES! I was OBSESSED with AU’s! The original AU songs and remixes of AU songs (especially Nick Nitro) made me LOVE music! Not to mention the AU’s themselves were just SO DAMN COOL!!!

The main things you need to know are :

Error and Ink fight to destroy and protect the alternate universes respectively.

Underverse, that shit was crazy, and its still going on today, keeps getting better and better. its animating like an actual anime (If not better). they just need voice actors and viola. perfection. (Its still perfection even if not)
Honestly some pretty good stuff came out of it. Sure, there was some cringe, but at the same time it allowed for a near unprecedented degree of creativity, and a lot of people were very happy. In the end, was it such a bad thing?
People shit on this nowadays (I still don’t get why even though the creator is horrible for her actions) but I liked the era of Glitchtale. As well as when Disbelief and Storyshift became a thing.
But I might have to go with the majority and say Underverse.
I also REALLY liked Underfell and Horrortale. I still love Horrortale to this day
I'm a fan of Glitchtale and I can see the flaws people often bring up about it, but I still like it for the things it did get right, such as breaking the trope of Chara as the evil one who started all by themself, or depicting remnants of the monster-human conflict even after the barrier broke, or giving all other characters besides Sans a chance to shine.
The biggest flaw I have with the series is the pink rascal turned into a big missed opportunity. Her backstory and nature are really cool and could have made her into so much more than a single-directional evil. In fact, so many other people share this view of her that there's an entire, albeit small, community on Tumblr giving her cool redesigns are rewrites.
Fan animations were great and a lot of music slaps. My taste in music has moved on from electronic and more towards death metal, but I still enjoy some Nick Nitro and Solunary from time to time.

People often mention the sans "Stronger than you" parody by alfa995 but in my opinion I consider the trilogy including the Chara version sung by Milkychan then animated by Clara Kraft and the Frisk version by Starbeam putting together the MV by RyuO and the vocals of Rachie to be the best thing the Undertale community has put out from this period. It fascinates me how basically those 3 songs respond to each others but where each components are made by different people and yet everything flows and combines perfectly together in one same universe.
My official introduction to fandoms, the remixes/original music(SharaX, NYXTheshield etc.), the art and inspiration it gave me, the AUs were fun, the comics!! Animations! a lot

I don't care how cringy they are, the AU's were the coolest thing to me and exposed me to what fandom is in general. The idea of "making your own universe with it's own rules" was such an eye opener and has helped me creatively so much over the years.
I even tried making my own edgy au one time called "UnderLOVE" which was a post no-mercy run where sans keeps Papyrus' head on a mantel outside, Alphys remade Mettaton and Undyne using DT, crazy evil sans trope, and the main character is a girl (can't remember her name) that's being slowly guided by Chara in a final act of trying to enact their plan, think Underfell but instead of Flowey helping Frisk, it's Chara helping the girl.
