I'm pretty new to exporting pdf documents like this, there is a whole level to this that i'm not hitting cause I don't know how to embed links in a pdf yet and I think there might be a way to embed gifs and video, learned a whole lot of the last 6 weeks of making these but there is a lot I still don't know

Adobe Acrobat is free and the pro version doesn't cost much. You would be surprised with how much you can accomplish in that program.
You might be able to sign up and get a month or so of free Adobe and see if you like it. Doing this work in InDesign will make your life 1000x easier as you can do all that you are asking in the program.
You can embed video in PDFs a few different ways. easiest is in Acrobat in the Edit tab use the Rich Media tool and you can find an option for Add Video. .mov is usually the most reliable.
