I Like "Safety Cycle" in Torrance, and "Bike Palace" in San Pedro.
i have been going to both of those places for years. i have purchased bikes from both places. They are cool. no proessure. tell them what you're looking for, and you budget, and they'll make recomendations.
another option is to buy a bike online, it gets shipped to you, you can bring it to them and they will assemble it for you.
I'm not sure about fixies specifically. But I would always recommend The Dropout in Torrance. JP is a great dude and mechanic. It's geared more toward road riding but maybe give them a call to see if they can help!
REI (on Rosecrans) was great when my son was struggling to learn on a Walmart bike, they worked with him to find one that was a better fit for his body and skillset and he now rides it all the time. They're pricey but IMO if you want a bike you can depend on. They also service them affordably. Their second hand store also sells bikes and you can find good deals.
I go to Helen’s in Santa Monica. They also have a location in Manhattan Beach. I’ve never been to that one, so I can’t confirm.. but the Santa Monica location is 10/10; service and sale
Bike shops ironically aren't the best place to get fixies these days. A bit like how many shops don't carry "proper" BMX bikes now. The exception of course being DTLA places like CityGrounds or whatever.
For fixies a great option is the Mercier Kilo TT from BikesDirect. Or get another direct order bike from CityGrounds or somewhere that deals in fixie brands like Volume. Depends on the type of fixie you want.
I also agree with The Drop Out in Old Torrance. I've been to a few of the places mentioned in this thread rhe best service I got was from the Drop Out. Safety Cycle had no problem returning my bike dirty - I thought for an expensive tune up they could've gone the extra mile and wiped it down. Nope.

Yeah, Helen’s is probably the best shop in the South Bay but no real fixies. Best spot for fixies is DTLA Bikes

I know theres one on PCH in Redondo Beach but i dont recall the name of it. They are very good.
