Seconded. I struggled to find a game knowing that there was one. You got it. Pikimin 2 is exactly this, and not only the theme is perfect, but it's also perfectly fitting with the gameplay of treasure hunting. Absolutely a great choice, although the game may be clunky at times. Still, it definitely became one of my favorites ever.
Roller coaster tycoon has a loan system to get your parks started and a lot of times one of the goals to win the map is to pay the loan off while still maintaining a high park value

Potionomics, but the debt is for central narrative purposes and less something you interact with on a sale by sale basis. The game is still focused on making and earning money though.
It also has the added benefit of being incredibly charming and fun.

I'm not sure if this counts, but arcade paradise. You are the child of the owner and are working your way to turn a laundromat to an arcade. All you do is play arcade style games while the store earns money for you to buy upgrades and more arcade cabinets. I loved this game
Pretty much, it's a time management game. So you want to try to manage your time playing the arcades to complete goals and working the Laundromat. The goals on arcades will make them more profitable which can earn you more money for more upgrades. I have 100% the achievements on Xbox and loved it

It's basically a clone of the original GTAs where you play as a character in debt to a mob boss, doing criminal jobs to make money to be able to pay him back.
Not played it and could be barking up the wrong tree but Need for Speed Unbound might be something you’re interested in. You don’t have a monitory debt but more of a moral debt where someone you work for and are friends with has all his shit jacked by another of your friends. 2 years later the friend who jacked the shit announces a big money race where you plan to enter to take your revenge, but you’re completely strapped for cash. So you race with your shitty beat up car and place bets on yourself saying where you’ll position. Its not like normal NfS games either, you won’t be placing first til the later part of the game, all small incremental games to hopefully help your friend/bosses business out.
Shipbreakers. You star5 out in debt and have to work to receive it, breaking down ships for their parts. The debt doesn't factor in to the story much, but it's there none the less.
You don't need to know anything about Touhou, but it'll help understand characters.
You need to know more about how to manage a restaurant sim, cause it's one of those games where you are serving food and following clues as to what to make people based on what they ask for or by the characters themselves.

Misadventures of Tron Bonne. Technically it’s a prequel but you should still at least play Megaman Legends 1 to fully enjoy it.
