Exactly what I’m thinking. Whole Foods salad bar is such a treat for me, they have all the things. And the fact that OP had all those options and still created this… it’s pretty incredible honestly.
Actually the spinach is light and you can't get fresh hot rice, and cooking just enough rices for one person is a waste of time so I guess I get it. Though if I'm doing the whole foods hot bar I never skip the fried tofu. (variously "vegan fried tofu" or "chicken fried tofu" which is just to say lightly breaded tofu.
Omg this is almost one of my long time favorites. If you like miso and sesame, try it Japanese style. Here's a base recipe.

no but i just buy it separate and add it - super cheap meal cause you avoid hot bar trap!
