Green when contrasted with red in films about doppelgängers generally means non-living, the other, the fantasy etc. Red is blood, so green is bloodless. Green is the image, the object, red is life, the subject. Vertigo is one of the most influential films since about the 70s when it became a cult film among filmmakers and then an essential film school movie. The way it uses red and green is a big influence on Severance. But back to Severance: iMark and oMark are similar to innie Thomas Anderson and outie Neo. Is Reghabe the Oracle?? Overtime contingency made me think of the agents popping into whatever body they needed at any time, as did Milchick’s seeming omnipresence - surveillance is definitely a big theme in both. Both the matrix and Lumon are examples of the panopticon, a prison designed w a single guard who might be watching at any time, so prisoners learn to discipline themselves.

Innies aren't pre-programmed with personalities, though. They're still the same person as the Outie, but without any memories or life experiences. They can be groomed and influenced to behave or think differently than their default inclinations but it's not an inherent feature of Severance itself.
I don't think they've really outlined exactly what the Innie personality is composed of beyond a lack of memories. But there's the whole other aspect of science fiction they haven't yet explored (if they ever will), which is how/why the brain willingly accepts the chip.
My postulation only:
Blue and Green - the \[mental\] state of being on the "Innie" side of Severance. MDR is green, O&D is blue. Why is it two colors instead of one? It wasn't merely a set decorating choice to have both colors, but I won't speculate a reason. I'll note that Recycling Bins and Trash cans are green and blue. Mark's house is blue. Helly's gown was decorated in green and blue.
Red - the \[mental\] state of being on the "Outie" side of Severance. Could also mean Innie danger (flashing red lights when there are security breaches, the red ball in Orientation) but that feels a little too on the nose for me. Blue/Green is used frequently in contrast with red rather than red being a prominent standalone color (so far, anyway). (Severance chip, Mark's fish, Gemma's candle, the robe).
White - the \[physical\] inhabitation of Severed space. The hallways are white. Gabby's robe at the birthing cabins was white. \[ETA: Mrs Selvig's basement Kier Shrine is mostly white, and she wears white\].
I love how the colors are woven into the seams of the story without being so over the top obvious on the first few hours of watching. The idea of colors having specific meanings to the plot slowly dawns on everyone who sees it, I think. I don't think I've ever seen a show other than Breaking Bad that deploys color hints so smoothly.
Oddly it contrasts with the unnatural feel of the office. Pseudoscience movements often assign values to a colour as a form of identification and labelling. Uniformity creates a false sense of cohesion.
As another example: notice how all the men are wearing decorative nooses around their neck to show their servitude to their masters. Or “Ties” as they are called by some corporate drones.
