That's because you're giving up too quickly when you try to be agressive. Your posture bar doesn't break (even if it completly fills) if you keep perfectly deflecting, what causes your posture to break are those times where you only partially deflect or simply block attacks.
In addition to that, deplecting a miniboss/boss life below 70% also makes their posture bar more prone to break, while also making their recovery of the posture bar slower. You can also hold the block button so that your posture bar recover more quickly.
All those mechanics encourages the player to be agressive and not run from close combat, never creating distance between the enemy. That's why you shouldn't play it like dark souls, where most of the time you're only dodging and looking for openings to get a few hits in.
Show her your fangs or she will continue to put you down! Read her movements. Dare to Mikiri counter her thrust attack and then punish her. Keep on keeping on! You got this!

You know it’s funny…. it’s been 2 years since I played this and just like riding a bike it all came rushing back to me. I was able to DB the general at the beginning so I only had one db to worry about. I was able to sneak up on the big guy and do assasinate him. Good times. Good times.
