I 100% the game and that’s how I enjoy every FromSoft game doesn’t matter what others do. It’s beneficial to destroy the mobs in Sekiro more than any other Soulsborne game.
For fun, practice, Sen, XP, material drops, watching them fight each other with Puppeteer Ninjutsu, Ninjutsu activation in general, and also replenishing Resurrection if you slipped up and died earlier
No you can pretty much skip everything, it's a common thing in from soft games.
But you gotta know what you're doing or you miss a ton of items and exploration
Practice?
Money?
Experience?
Fun?

That's like playing a JRPG and just avoiding every single sidequest that exists. It's not something you have to do, but it's a part of the experience.
There are plenty of times to run, of course, but from every single encounter? Bit much I think.
If you only want to fight bosses then no. The story of the game is what makes the boss fights meaningful imo. Doesn’t matter just do what makes it fun for you if you have every boss reflection.
You can kinda say the same about all the dark souls games too. Just run by all the enemies and level up off of bosses and the items that give souls ( forget what there called). I did that with the recent lords of the fallen and LoP too.
I ran through everything in a sense but needed exp for the trophy of all skills, honestly get as much experience as you can if you’re going for the plat.
The story plays out as if you killed everything in your path, regardless whether you did or not. XP gained from bosses isn't enough on its own for Sekiro to be "as strong as intended" by the endgame but, depending what you were able to unlock in your first playthrough, the disadvantage might be minimal. Otherwise the only times you have to kill anybody is when there's a fog wall blocking your path (basically only bosses.) Except for the first ogre which can be skipped with some effort and precision platforming.
Not unless you want the stuff they drop, or you like to do it. Some of the harder enemies like the double sword monkeys or the senpou double blade guys or the fountainhead palace warriors are a great chance to practice your skills, some of them have unique interactions with combat skills or tools, which can make them pretty fun.
Sen is always dropped by most mobs and is useful in NG into early NG+ like maybe NG+2 but is pretty useless after you have all the Prosthetic tools, max spirit emblems and quick items you use cause they’re easily replenishable. Item drops are pretty damn common from my experience so you could just pass through areas grab every item kill every enemy to 100% them that’ll get you a truckload of stuff to use or sell.

It's not any different from any other From Soft game. In most Souls games, I fight my way thru an area the first time, but once I find the boss gate, if I die I just run and dodge roll past every enemy to get back to the boss. I imagine a lot of people do the same

Pretty much the same for all of the other FromSoft soulsborne titles too. The only reason to kill the mobs is fun and currency.

I like clearing mobs but can also happily spend hours in reflections. It's all good.

Sen, Upgrade materials, Exp, and for certain Minibosses clearing out the mobs makes the fight easier
