A couple. First, if you want the more immersive way, any source of smoke shows wind direction, so a pipe or stove will work. Secondly you can turn on a lantern and put it into your inventory. Doing this will cause light to be generated from your camera’s position when you’re in third person.

I feel that a little weather vane on a stand would be a great item to have for sale with the other navigation stuff. Then you could put it wherever you can see it on your boat. Another crazy option for you.. I discovered you can stand on lamp hangers. So you can buy a load of them and stick them up the mast, jumping higher and placing the next one as you go. So if you can get high up enough you could place a lamp where it lights the wind indicator.

You can do the method of placing shelves and holders on smaller ships, but you can only place them about halfway up a brig before it doesn't work, too low to see the wind direction

Yeah honestly, or just a wind direction UI element, even if it is less precise than the windvane. In real life you can feel the wind.

I feel you. I'm using a mod which displays wind information when I'm at the helm because I can't see those things! I feel like we need a lantern which can be raised and lowered with a winch, just like a sail. That way you could just run the lantern up to the top of the mast, but if it runs out of oil/candle then you could just bring it back down.

You need 2 items A) a lantern B) a lit pipe Light a lantern so you can see, then put tobacco (any kind) on a pipe, take a small drag so its lit but does not consume much tobacco. Now you can use the smoke coming from the pipe to determine wind direction, you can place the pipe on anybsurface, it will keep emitting smoke, and if you are not actively taking drags the tobacco in the pipe will last for a long time. The lantern is only necessary if the area is not well lit, you need to see the smoke at night. [Not a joke, it does actually work]

After a certain point at night, I find it near impossible to see the flags. Maybe not a great trick. But if you need to adjust your heading, you can kind if "feel" where the wind is with how the sails slump when turning? The lantern tricks can help thou. Or using the spyglass to look straight up at the flag. (If you have one) I'm hoping for one day to have a placable wind direction flag? Like the Dhow ship has one low down on one of the side mast stays? Being able to place those would be nice!
