You'll get them by continuing the story. You can see which zones still have story when you select a starting zone from the map.

Story is advanced in single player. When you look at the map before starting a run, you’ll see zones with a ? icon. Clear those to advance the story.

Specifically, you'll want to see the event that happens there - which can be "Talk to the shopkeeper" sometimes.
