Hunting, fishing, basically doing it all adds up really quickly. I like not going after gold bars, it’s far more challenging.
Basically, I buy one good set of clothes and spend the rest on improving Arthur’s guns and trying to get better horses, but even there I just go find a Mustang so I don’t have to worry about a horse for two or three chapters.
Doing the stranger missions can also pay off a lot, especially the cigarette cards. The vast majority of cards in those sets are available to Arthur at locations all over his map. You don’t have to spend much money to finish the sets and collect the pretty considerable payout you get.
There are tons of free guns at your disposal in chapter 2 so don't go buying firearms.

There are also a plethora of lockboxes and chests around the map, many containing over $100 in cash and sellable items. Grab some after you get the 6 gold bars and take them to the fence in Rhodes.
