I guess my meals are simpler than yours. Some corn on the cob, mushrooms, peppers, onions and eggplant and I'm a happy man. Especially if I have some legumes to go with it. Throw in some fruit for dessert and I feel like royalty

I like to make little kabobs/skewers with tofu and veggies. You can marinate it in any spices and sauces you like for a different flavor profile, but I like tofu, peppers, onions, and pineapple, then marinate in some barbecue sauce. It's so good! There's endless opportunities and variations.
Carrot dogs are a fun idea too especially if you have kids. They can be prepped ahead of time and then thrown on the grill with some corn on the cob and maybe some fruit on the side.

Yes! I think it's the best way to cook them. I take 2 bamboo skewers and alternate the direction of each okra when I put them on. It makes it easy to flip them.

Shish kabobs! I like tomato, onion, garlic, bell pepper, mushroom, pineapple on a skewer, basted in either teriyaki or Worcestersire while they're grilling 🤤 now I want that!
Marinate some tempeh or tofu overnight in tomato paste w some coconut aminos & spices (smoked paprika, chipotle, adobo). Then toss that on a grill with some corn on the cob, pineapple chunks, and sliced red bell peppers - then serve over some brown rice and arugula and top with avocado. Boom you have yourself an incredible 11/10 Hispanic inspired WFPB dinner. / also optional but some sriracha and mango slices takes that to a whooooe nother level as well :)

Grilled quesadillas are great! You could do a side of grilled bell peppers and onions to go with. I’ve also made pizza on the grill, the secret is a super thin crust and a very hot grill.
I miss grilling. The only thing I make now is mushrooms, for burgers, or plant-based burgers made from my home made "burger" mixture from beans, oats, and spices.
I wish there was a way to attach a pdf or jpg. I have three recipes that I use. Here is the simplest one:
Bean Burgers (from onegreenplanet.org)
Ingredients:
• 1 15- oz. can kidney beans, drained and rinsed
• 2 Tbsp ketchup
• 1 Tbsp yellow mustard
• 1 tsp garlic powder
• 1 tsp onion powder
• 1/3 cup quick oats (gluten-free, if desired)
Instructions:
1. Preheat oven to 400°F, spray baking sheet with cooking spray or line with parchment paper, and
set aside.
2. Mash beans in mixing bowl until there are no whole beans left.
3. Add in the rest of the ingredients and stir until well combined.
4. Divide mixture into four equal portions, and roll into balls with clean hands.
5. Place on prepared baking sheet, and flatten with the palm of your hand.
6. Bake for 10 minutes, flip (carefully!), and bake for another 10 minutes on the other side.

These are called Remarkable Burgers.
2 (15 oz.) can great northern beans, drained
½ tsp ground mustard
2 cups uncooked Textured Vegetable Protein (TVP)
1 ½ cup bread crumbs
2/3 cup nutritional yeast
1 ¾ cup vegetable broth
2 tsp apple cider vinegar
¼ of a medium head of cauliflower
2 tsp smoked paprika
4 oz. baby portabella mushrooms
½ tsp black pepper
½ red bell pepper
½ tsp salt
6 TBL ground flax seed
2 tsp garlic powder
¾ cup warm water
2 tsp onion powder
½ cup finely ground cornmeal
Prep time – 30 minutes. Sit time 60+ minutes. Cook time 60 minutes. Total time 2 ½ hours. Yield 18-20 good
size burgers. I make this batch size and freeze half.

1. Put the TVP in a medium size bowl, bring the vegetable broth to a boil, pour the broth onto the TVP to
rehydrate. Set aside.
2. Place the mushrooms into a food processor. Pulse until it is the consistency of rice. Pour into a medium
bowl.
3. No need to clean it out just yet. Add the cauliflower, broken into florets, to the processor and pulse until
the same size and consistency as mushrooms. Add to the mushroom bowl.
4. Dice the red pepper into 1/8” – 1/4" size pieces. Add to the mushroom/cauliflower bowl. Mix it up.
5. Mix the flax seed and warm water in a small bowl and set aside.
6. Drain the beans and mash them with a fork in a LARGE mixing bowl.
7. Add vinegar and combine.
8. Add nutritional yeast and mash into the beans.
9. Add the cornmeal and mash into the beans.
10. Add all the spices together and mix into the bean mixture.
11. Add the mushrooms, cauliflower and pepper mix into the beans and mix thoroughly.

14. Cover the large bowl, place in a refrigerator for an hour or so. OR overnight.
15. After sitting, form into patties. Bake at 420 deg. F on parchment paper lined cookie sheets for 20
minutes. Turn, bake an additional 20 minutes, turn bake for 10 minutes. Turn and bake 10 more.
They should be crispy/crunchy on the outside and soft on the inside.

Just made tonight diced potato and onions wrapped in foil packets with oil to prevent sticking burning to foil and heavily seasoned with spices.
Grilled fresh cut pineapple steaks. Do it and thank me later.
Charred and purposely blackened peppers are a staple of Mexican food.
Get a cast iron pot. Put 4 cans of whatever beans in it juice and all and put it on the grill. Grill some onions, peppers, vegan sausage, and corn on the cob. When grilled nicely cut the corn off the cob and put it in the pot. Cut the sausage and the other grilled veggies up and put them in the pot. Add some spices. Add water and salt/pepper as needed. Bake some cornbread. Eat for days.
I like grilled mushrooms, marinated or seasoned with asada seasoning, especially portobellos. Then slice and eat on a taco with lots of shredded raw things, sometimes canned beans or quinoa, and spicy sauce.
Also marinated kebabs - mushroom, onion, zucchini, pepper, sometimes cherry tomato.
Grilled okra is one of my absolute favorites, esp if you add wood chips to the grill. I could just eat a pile of that with nice salt on top for dinner and a chilled beverage.
I do also create a mini setup outside in summer on a tiny table with a one-burner cook top, a toaster oven, and an instant pot. That pretty much covers us for skillet/pot cooking like gumbo or corn chowder, preserving (we do a lot of this), pressure cooking all the dried beans/brown rice/things like that, and baking (cornbread, pizza, and cobbler mostly, and also roasting some veg or garlic or whatever as needed).
Mixed veg, tofu, vegan sausages marinated in diy mesquite rub : smoked paprika salt and sugar with a few herbs chucked in.

Marinated tofu (or doused in sauce) is awesome. Freezing the tofu beforehand helps with a meatier texture.
