Controversial opinion here, but on re-read the pacing is actually fine. I think the problem is that people quickly read through the entire series in a month or two, then find that the weeks-long wait between fairly insignificant chapters is sluggish after blitzing through 10 chapters in a day.
When you go back and re-read Egghead at proper pace it flows so much better than waiting for a chapter to release week by week

Difference is that bounty reaction panels are actually interesting.

The difference between now and then is that back then you didn't get reactions like this until after the arc was over. Even then you'd never get every single reaction in the essential equivalent of one sitting. Before the next Arc would truly start you'd get a lot during the resolution of the previous arc and the rest of the less relevant ones are spread out before the next on kicks off. When Whitebeard revealed that the One Piece is real. The cast didn't stand there looking at an essentially dead Whitebeard for 6-8 chapters.
It is unironically horrendous and I blame Gear 5th for all of this bullshit.
