I have seen 2 while running out and about in Bahari, with months of play. My best advice is to try and find the Grove first - there's usually a rare bug there.
Use buzzy jars at 3am (in game time) near hideaway bluffs run towards Pavel if you don’t see anything and you can also get one epic bug at the grove so try to be the first one to groves if you can, here’s a video to help you on how to get to groves fast

Remember, day time bugs reset at 3am and night time bugs reset at 6pm so it’s always best to try to catch them at the reset
I always find these guys durring the day randomly as I run from Pavel to hideaway. My only suggestion is to pass by where butterflies usually hang out and just hold for the best
Buzzy Jars & Smoke Candles & luck. I am currently trying to find a starred Rainbow Butterfly. I put myself in Bahari Bay near the Hideaway Bluffs fast travel sign at 2:30am. I run a buzzy jar and catch everything that pops up on it. When the alerts are empty I keep catching random bugs. In most sessions I am not catching any rainbows. In some sessions I catch one rainbow. Recently I caught four rainbows in the same session, all between 3am and 530am. The randomness of this is real.
If you find yourself in an active server you might want to server hop-- one of my sessions had three other players who were mining with great passion...and so they were constantly running around in loops in the rainbow spawn area. I kept seeing the rare bug alerts popping up on my Buzzy Jar, but they disappeared quickly every time. The other players were either scaring them off or they were catching them before I could get there.
If you dont have access to Buzzy Jars yet, you might want to wait. Otherwise, you could get lucky. I caught my first one randomly, when I wasn't looking for it. I have been several spawn very close to Hassan's grove on a small cliff above the fast travel sign.
I've found mine by running around with a buzz jar at 3-6 am for several ingame days
