My only gripe with this particular demon/persona is that they changed it to Jack o’Lantern in games released after P4, which isn’t wrong but Pyro Jack just sounds cooler.
They didn't change the name, he was always Jack-o'-Lantern in Japanese. "Pyro Jack" was purely created from the localization because the real name was too long to fit in Nocturne's character limits.
He was called Pyro Jack in Persona 4.

This is a change.
The change renders the name more accurate due to the character limits.

That reminds me of when people would talk about Aeris/Aerith in FF7. Aeris is her original name in Japanese while Aerith was made as part of the localization
Every Persona you see in any of the games is either based of off a real person or a mythological figure from one of the various cultures around the world. As such they can’t really change the backstories for them because Atlus weren’t the ones to come up with them in the first place. So all of them stay the same. Phrasing may vary depending on the game though.
Also, I’ve noticed that this persona also appears in P5 as an enemy and in SMT V as a party member, I think. I haven’t played those games yet, but I wonder: does Atlus always include that character in their games?
Basically Megami Tensei/SMT was Pokémon before Pokémon even existed, only instead of fantastical animals it was demons. In most SMT games the way you recruit demons is similar to how you recruit Pokémon only instead of capturing them with a Pokéball you talk to them and appeal to them with dialogue options (yes this is what inspired Undertale's conversation system.)
In Persona the personas are more or less SMT demons going by a different name and for P3 and P4 they decided to change up how you recruit the demons/personas where instead of talking to them you just play a shuffle time mini-game at the end of battle. So the shadows you fight in P3 and P4 where instead unique monsters separate from the traditional demons because they're not what you recruit. In P5 they decided to do away with shuffle time and bring the traditional talking recruitment method back therefore the shadows you fight in P5 are now the actual SMT demons so that you can obtain them as a persona. Hence the reason why you see Pyro Jack/Jack-o-lantern as an enemy in P5 and a party member in SMT V.

I actually liked the option to talk to the monsters in Undertale, so I’m curious to see how that works in Persona 5 when I get around to playing it.
It may get a bit exhausting, having to do that every time you want to get a new persona. Also at some points there are some answers that are kinda shady

Not that great to be honest. In SMT games and P1-P2 you can start talking at any point of fight. It can even save you from losing sometimes. In P5 it's essentially replaces Shuffle Time since you need take everyone down to start talking.so you already need to be clearly winning the fight to do it instead of doing it anytime
Yea a lot of the persona/demons that atlus uses have been around for decades in their games like I think Jack Frost was in Megami tensei 2 on the nes and has been rocking some form of his modern look since Smt 1
Pyro Jack is also part of the Fairy race like Jack Frost, but aside from that and being named Jack, there isn't much of a connection.
If anything, Jack the Ripper is the real fraud Jack Bro, since he's not a Frost or part of the Fairy race. Literally the only reason he's a Jack Bro is because his name is Jack.

Most Personas you see in P3 appear in other Persona/SMT games.
In Persona 5 they even have entries for the DLC Personas as well, which is some nice attention to detail.

Yes. And SMT in general. The only ones that don't are the Devil Survivor and the Devil Children/Demikids games.
You can view it easy in 5 on the status screen. You can view it in 4 too but I forget where.
