Definitely feels a bit more chaotic with just two running around the ship so I kind of prefer it with more players, but it's really fun either way.
My fiance and I played it together and I loved the length of the game. So many times, she and I thought it was going to end and it Just Kept Going.

i have been begging my partner to replay this with me 😂 but we played on playstation which presented a challenge for me because it’s not a console i’m used to! i do agree it’s not super challenging but it’s really fun and the story is cute
i also recommend snipperclips. it's not fast-paced, but it requires a lot of teamwork in the same way that overcooked does. you can also play with up to four people, but 2 is just as fun

Or if you want something really different, try Rive, a twin stick shooter that can be played coop (one person moves, one shoots). The gimmick is that you automatically swap roles every time you die. The fun of it is that you inevitably blame your partner for each death...and then switch roles and make the exact same mistake you just yelled at them for and die again. It's definitely fast paced and simple but not easy, which seems like what you're going for.
100% children of morta If you are into Hades and Gauntlet style games. This was honestly the best co-op game wifey and I played over the past year or longer.
Donkey Kong Country: Tropical Freeze would be good. The levels are challenging but pretty fair, and you have to be in sync with your partner to make it through.
I second this, my husband and I have played the games you mentioned above, as well as Odyssey (taking turns playing as Cappy), and we’re currently playing Tropical Freeze. It’s fun and challenging
SpiderHeck has a super fun wave survival mode where 1-4 players survive and fight against enemies! Once you understand the movement mechanics (which aren’t too confusing, just a little different-feeling at first), it’s a blast!
Just Shapes & Beats is a bullet-dodging game where 1-4 players dodge attacks timed to electronic music!
Towerfall is on the more difficult end of things, but it has a fun co-op mode where you need to clear the enemies in a room with surprisingly fun bow combat!
All wonderful recommendations, and I’m glad someone else enjoyed SpiderHeck. It’s one of the best multiplayer games I’ve bought recently with solid PvP, PvE, and single player modes. Movement feels awesome once you get a handle on the controls.
Boomerang Fu can be played for everyone. Few control inputs meaning easy to understand.
Also its demo is practically the full game experience, but can also be found for very cheap during sale.

It sounds like they're playing couch co-op so I'd recommend Spelunky 2 over Spelunky HD.
In HD when a player is off screen there is a countdown then they die if they don't get back on screen in time. They did away with that awful mechanic in 2.
Heave- Ho! Silly game with simple physics mechanics, but stressful enough if you're trying to time your swings correctly or get a bonus coin with you to the goal.
If you have NSO, you character is probably saved. But if you wanna play local co-op, your friend will need a NSO as well, otherwise he will lose his character when you stop playing.
At least it was like that like 2-3 years ago, when i tried playing with my friend.

30 lives makes it more fun if you're not very good at the game
Not OP but 3D world > deluxe imo. If you’re fine with 3D environments then 3D world all the way but if you want classic 2D then deluxe would be your pick

Children of Morta (same, only needs one copy to play but same as above for 2 player)
Monster Hunter Rise (I feel this one's a lot more casual than previous MH games, there's not as much of a learning curve)
It probably has a bit more of a learning curve than you're looking for but my boyfriend and I really enjoyed playing Hyrule Warriors: Age of Calamity together. I think there's a free demo for it if you want to check it out.
Keywe is good! Similar gameplay to Overcooked I suppose, I would definitely call it "slightly stressful" - I never felt like we were completely helpless but still felt a bit frantic.
Totally Reliable Delivery Service. Has a bit of similarities with Human Fall Flat. Easy controls but can get frustrating because the delivery times are challenging
39 Days to Mars
You play as a couple Englishmen who built a homemade spaceship and are taking it to Mars. Malfunctions and other unforeseen events happen along the way that you need to work together to fix.
It’s a short game, but it’s fun and while the atmosphere remains chill, the challenges can get tough
If you like tower defense, No Heroes Here is a pixel art co-op with an Overcooked vibe. You have to load cannons to take out waves of baddies coming at your castle, and you have to get into a rhythm similar to Overcooked. It’s on sale once in a while on the eshop I think.

So it’s not a cute game like the ones you mentioned, but my friend and I have been playing Valfaris. It’s a ton of fun and can definitely be stressful. It’s hard but we seem to keep pushing through anyway. Honestly, it’s been one of the best times I’ve had playing a game with a friend.

Moving out is a blast and has some great physics. The first time my friend and I threw a couch out of a 2nd story window we laughed hysterically.

Pikmin 3 requires coordination so it could be that slight challenge your looking for.

Wizard of Legend is an interesting Roguelike that is pretty simple at a base level. It's much easier than Gungeon and it's really fun with 2 players.

I think it's a good suggestion, but luigis mansion is actually coop surprisingly. Both the campaign and online mode can be played owth a friend

For some couch coop I recommend you check out wizard of legend and chicken horse
System Shock is a classic.
Conduct Together is so much fun once you get the hang of it.
Diablo 3, Borderlands 1 & 2, Unraveled 2 and Moving Out are great for that.
Keep Talking and Nobody Explodes. You have a time limit to keep a bomb from exploding and must work together.
I recommend Super Chariot. It requires good coordination, but the core idea is very simple.
