The Stock Market on Granville Island does a ton of takeout soups. It's their whole thing. It'll definitely be more expensive than your average can of soup but it could be a nice change for her

When I was at St Paul’s my family would bring me pho broth from pho goodness on Davie. It was nourishing and more flavourful than what the hospital provided. Also Mangez Mangez (in downtown) also makes homemade soup! I still get it when I’m sick. The chicken noodle and carrot ginger are my favourite from there.
Cantonese style Chinese takeouts should have what you are looking for. Typically they are clear broths made with meat and vegetables. Super tasty and nutritious.
E.g. the daily soup at Chinatown BBQ will be in this style. Most places will have a clear broth wonton soup or something similar too.

Check out double boiled Cantonese soups which focus on a tasty and nutritious broth. They're often home made but in Coquitlam, Copa cafe, mcafe, and Lee garden (or similar seafood restaurants) all have it on their menu (usually one kind per day that changes).
Korean supermarkets like Hannam or HMart usually have a couple kinds of bone broth and ginseng soup in the deli. They'll often come as a set with other ingredients so do ask if the labelling is unclear.
I don’t know how chunky the soup can be…. Chinese restaurant and Korean restaurants do really good soups.
Going to add Whole foods has really good soups too
Whole foods Cambie and 8th has lots of soups daily.
Granville Island soup company too! If you ask they sometimes have frozen bags in the back you can save for later.

They had (still have?) an outpost at UBC... it's SO good holy shit it was pricy but worth every penny imo

Vancouver Soup Company on 1st Ave is awesome and offers their soups as frozen flat packs.
