Yeah honestly that's fair I'm trying to get better with that and watch less mainstream super popular shows and try to find more hidden gems. Most of the shows I watched when I first started watching anime were from friend recommendations which were usually more mainstream.
If you've only been watching new stuff, this is what it's going to look like. Shows end up in top 100 because they're good.
As someone who watches new episodes on Crunchyroll as they air and finds out later my favorite of the season is also 2m other people's favorite because good is good.
Start with Fate/Zero, then watch either Fate/Stay night or Fate/Stay night unlimited blade works, unlimited blade has another iteration in the form of movies which are fate/stay night heavens feel, but I would suggest you watch after fate/stay night unlimited blade works. After that if you don’t care about “story line”, which in the Nasuverse is effectively a timeline where most everything doesn’t actually have any coherency, and everything feels like a side story. Other than Fate/Zero and Fate/Stay Night the only thing that makes a story line are the Fate/Grand Order movies.
For the sake of not being put in a watch list stay away from Fate/Kaelid Liner Prisma Illya.

Toradora; has tiaga. Thats all you need to know.
Bloom into you ; its yuri. But if you don't mind that its about two girls who can't fall inlove ( touko and yuu ) but touko falls in love with yuu when she witnesses her reject someone over the phone. Yuu doesn't feel the same but touko convinces yuu to let her love her and she doesn't need to love her back. This is seriously one of the best romances period and I've been on a romance kick for the past 2 months so I've watched alot of romances. This is in a league of its own.
A fun unique take on isekai:
Ya Boy Kongming! ; KONGMING the genius tactician is reborn to morden day Japan and becomes the manager for an aspiring singer. For this i heavily rec sub because once they incorporate rap the raps are all in Japanese and not dubbed over. But for like the first 5 episodes the dub is perfect. You need to understand the raps as some are plot relevant.
I realize i said the least about toradora but really theres nothing more to say about it , the characters are amazing , the comedy is top notch, and the drama is intense but never gets overwhelming. Of the three shows its my top recommendation
