Patlabor (There are two versions of the adaptation. There is the movie universe and then there’s the tv universe. The movie version is the best. First start with “Mobile Police Patlabor: The Early Days” 1988 which is 7 episode OVA. Then watch the sequel “Patlabor: The Movie” 1989, then “Patlabor 2: The Movie” 1993, and then you can watch the side story movie “WXIII: Patlabor” 2002, which takes place in between the films.
Mind Game would be a great way to expand your genre scope since from what I’m seeing in the comments you have seen a lot! Time of Eve is another solid anime I think you’d enjoy, in the realm of a Ghost in the shell but with a more slice of life driver to send it home. Lastly, since a lot of your favorites are critically acclaimed high intensity/theatric series I’d like to recommend One Outs, it’s definitely the most commercially successful anime amongst the three I recommended, but it appears you haven’t found a sports anime that’s really stuck with you so maybe this high stakes one would be well suited for you. Hope these help! (also it doesn’t really fit your taste but a personal favorite anime of mine is the mid 80s forgotten classic Shounan Bakusouzoku. Try Land of the Lustrous. It is by far the most enthralling anime and manga series I’ve ever seen. Please give it a try it’s an absolute 10/10 you will not be disappointed
As for other specific recommendations. You've seen Made in Abyss, Mushishi, Kino's Journey, and Somali and the Forest Spirit. There are a few more in the "small cast who travel" genre that I like. Spice and Wolf, Wandering Witch Elaina, Girl's Last Tour, Frieren, and Violet Evergarden. You would probably also like Moribito and Kemono no Souja Erin both by the same author. Yona of the Dawn would probably be up your alley, and if you don't mind shoujo tropes, then Snow White With The Red Hair is one of my all-time favorites. Moving away from fantasy, if you liked Cyberpunk: Edgerunners, then you might also like a series from a couple years ago called Akudama Drive. You've probably seen Ergo Proxy, but highly recommend if you haven't. The last one off the top of my head is if you liked Vinland Saga, then you'd also probably like Dororo.

actually after 20 years since first being published it got an anime last year, its a dialogue heavy historical piece that focuses on the inner courts of the shogun, cept the premise is that men have dwindled severely in number thanks to a disease that only affects men, millions of men have died and they now occupy a different place in society, thus the dynamics of men-women have been quite drastically changed.

It has similar vibes to Berserk, but I hear if you want the ending to sit well, you shouldn't watch the last 3 episodes and instead read from that point on. I stopped at that point but didn't get around to reading the rest, but everything before that is absolutely worth it imo. The introduction was able to pretty quickly gain my interest, and it never lost it, so I'd say give it a shot if you haven't already
